Meet Chef Day:  I’m Theodore Day Salonga-a culinary consultant and founder of MonDay Chefs, a restaurant owner, and food writer (co-author of The Malunggay Book). I love to eat and I love to cook. But sometimes what I love most is when someone else cooks. And when that person tempts my palate with sumptuous creations, I am inspired to eat more, to cook more and to dine more. Cooking is 25% technique + 25% Ingredients + 50% Inspiration.

In 2008, I was diagnosed with Myositis - a rare muscle disease, affecting 2 in 5 million people. It did not stop me from cooking and living a life of my dreams. Placing my heart in every dish I create, I have reached my inner strength beyond my own limitations, proving my disability has not won. I am a Pinoy on a mission: to cook, eat and celebrate life!

What inspires you to make adobo or Filipino food? 
My roots - My family inspired me to cook and be who and what I am now.  My childhood memories fuels my cooking and developing recipes.

What makes your adobo special?
My adobo is a Tagalog Adobo - I grew up in Laguna (South of Manila) and instead of the dark colored adobo, my adobo is yellow in color and has a different spike on it.

Editor's note:  "Dilaw" is tumeric which lends the lovely yellow color to Chef Day's adobo.

Special memory about Filipino food:
I've traveled a lot and been to different places, but I still go home to my own food. Filipino food comforts me. Every time I eat Filipino food creates a special memory. It is a regular during family summer picnics.


Where do you think Filipino food will go in the next few years?
Pinoy food will be the "Next Big Thing"
