Meet Robert:  My name is Robert Colinares and I started a blog called Filipino Food Lovers back in 2007 with the sole intent of sharing my cooking fascination and helping others who share the same cooking interest.

I am a Filipino American, married to a beautiful American woman, and a father of two wonderful boys. I was born in Antipolo City and then moved to Quezon City where I grew up before coming to the U.S. in 1992.

What inspires you to make Filipino food? 
What inspired me to cook and share my recipes is to help other Filipinos who can use a hand in the kitchen. Specially to the ones abroad who is fairly new to the kitchen. By learning how to cook their native dish it will take some of that homesickness that they experience away from their love ones.

What makes your adobo special?
I have been blogging now for over six years and I have not come across adobo that has curry powder in it. So since us Filipinos likes curry I decided to incorporate it to a classic well-known dish to give it a good compliment.

Spicy Pork Adobo with Curry Powder

Ingredients:

1 lb. Pork belly - can be substituted with chicken or beef
12 Thai peppers
2 Medium sized potatoes - quartered
4 Cloves of garlic – peeled and smashed
4 Bay leaves
¼ Tsp. Hot Madras powder (curry powder)
3 Tbs. White sugar
¼ Tsp. Whole peppercorns
½ Tsp. Ground black pepper
¼ Cup soy sauce
¼ Cup Vinegar
1 ½ Cups Water

Cooking Process:

Mix all the ingredients except the potatoes in the pot or pan.
Cover and let it simmer for 10 minutes.
After that, add the potatoes and let it cook for 8 minutes or until tender.

After potatoes are tender, remove them from the pot, set aside, and continue to cook the pork belly until all sauce is nearly absorbed.

Add the potatoes back in and mix until all the ingredients are well incorporated.

That’s it you’re done. Top Adobo over hot white steamed rice. Enjoy!

Note: This dish is easy to cook. However, it does need a careful approach as not to cook it too soon and end up burning it. Good luck to you!
