What inspires you to make adobo?
What inspired me to prepare Filipino Adobo was the similarities with Mexican cuisine.

What does adobo/Filipino food mean to you?
My kids are half Filipino and I really wanted to get involved and participate in their other culture. Most of my close friends are also Filipino so it made my attempt at making Filipino food feel natural.

What makes your adobo special? 
My Adobo is part of a now famous Half Mexican Half Filipino Dish called the Papalote MEXIPINO Chicken Adobo and Garlic Fried Rice BURRITO! The MEXIPINO Burrito was featured on TV on Adobo Nation throughout the Philippines and the US.

If you can share your adobo with anyone, who would it be?
My grandma. She would have loved my Adobo.

Aside from adobo, name a Filipino food that everyone should try at least once? 
Kare Kare! Now THAT'S Delicious!

What makes you proud to represent the Fil-Am Community?
The fact that my kids are "Mexipinos" and we get to share and celebrate the cultures.


Where do you think Filipino food will go in the next few years?
I have no doubt it will continue to grow and be more accepted in the American menu.
