What Inspires You to Make Adobo: It's not much of an inspiration. It's in my blood. The sauce runs in my veins already that it's an automatic solution for having a comfort food when you start missing home.

Where do you think Filipino Food will go in the next few years?
It's getting a lot of media attention now. It'll be as common as Chinese or Thai food.

Special Thoughts About Adobo:
It's our knack of cooking whatever is available. Take kangkong adobo. We can cook every single part of the chicken as adobo.



What Makes Your Adobo Special:
[I] don't think it's special. I just think that I take pride that it's one of those OG dishes that has been passed down by generation. It warms up your soul when you cook it because it reminds you of the person that taught you how to cook it now that they passed away.


Pork Spare Ribs Adobo for Dummies Recipe
by Ro of @ThisPinayCanCook

INGREDIENTS:

3 lbs pork baby back rib cuts
cook's note: ask your butcher to cut it sinigang style or into individual ribs
5 cloves garlic grated finely
2 regular size white onion chopped
1/2 cup soy sauce
1/4 cup pure cane vinegar
1/2 tsp sugar
3 dry laurel leaves
1/2 cup water
black pepper
2 tbsp olive oil or cooking oil
steamed rice


PROCEDURE:

1. On low medium heat stove top place pot on heat, pour in the cooking oil, and sautee the garlic and onions.

2. Stir and cook until the onions become translucent.

3. Add the meat then cover it tightly. Lower the heat to low and let it simmer until the meat's natural water content comes out - approximately 20 mins.

4. Add the soy sauce and laurel leaves, stir then put in remaining ingredients: water, vinegar, black pepper, and sugar. Cover it again.

5. Let it simmer for about 2 hours on low heat and allow for the liquid to steam out.

6. Take the lid off and let the liquid reduce until it thickens.

7. Serve with steamed rice.
