Meet Ron:
Ron Escopete is a transportation and logistics professional, born and raised in San Francisco, and residing in LA. Of Filipino descent, Ron has always maintained close ties with the Philippines. He had learned not only from his parents who immigrated over 40 years ago, but from frequent first hand travels and visits to the Philippines. He has known all his life that there was something different about being Filipino and no matter what the circumstances are, or economic resources a Filipino has, the people always remain the eternal optimists.

What inspires you to make adobo?
This is a family recipe that has been around on my Dad's side of the family for a couple of generations. My Dad (Uncle Clem) moved to the US in 1972 and from then on really made it his own. For me making "our" Adobo is like a Memorial to my Dad who passed away in 2011. As I was growing up, our adobo was our constant, our "home". I was was really happy that in 2009-2011 my Dad was able to really share his Adobo with more people. It was almost like he was bringing everyone into our "home" with his adobo.


Special memory about your adobo:
With my Dad passing in 2011, the special memory is more of a whole memorial for me when I think about or prepare our adobo until today. I would watch him while I was young making adobo all the time. He was such a perfectionist and would make sure all the details and things were all perfect. If it wasn't it was like he did not want to even serve it to us. For me, it showed me the care he put into it and making sure it would be the best for his children or anyone else he was sharing it with.



What makes adobo special?
I think adobo is such a personal thing. Almost a familial thing. That is what makes it special regardless of who you speak with. Their adobo is their family one, and that's what makes it special to them. For me, it follows that same line of thinking. I was always partial to my Dad's adobo while growing up and it brings nothing but really great memories to me. My dad would put a lot of care into the prep just like he would put a lot of care into my sister and I. My sister and I loved garlic and it transformed into an intensely garlic rich rendition of your classic adobo.
